Normally water boils at 100, but at the top of Mt.Fuji it boils at 88 because of the low pressure (less air).
Vacuum fly is an application of this principle.
By creating a vacuum inside the fryer, you can lower the boiling point of the water contained in the ingredients and fry them quickly.
As a result, it has a crispy texture without sacrificing flavor, aroma, umami, or color.
